I really like trifle.
The other day, I bought a tin of grass jelly and wondered if whether an Asian-inspired trifle could work.
You could make the following substitutions:
Sponge cake/jam swiss roll -> pandan cake or ma lai go (Cantonese steamed cake that you get at yum cha)
Raspberry jelly -> grass jelly
Custard -> The same, or maybe coconut or pandan flavoured?
Peaches -> lychees, jackfruit
Whipped cream -> Coconut flavoured cream?
